Scallops
Spring onion sprigs, finely chopped
Ginger, finely chopped
Sugar
Vegetable oil
Oyster sauce
Salt
White wine |

Method
Prepare scallops by soaking in hot water for approximately 5 minutes
Heat 2 tsp of oil in a wok. Add scallops and stir fry until golden
Add ginger, spring onion, sugar, oyster sauce, salt and white wine to wok and fry for a few minutes
Serve immediately
Serving suggestion – place scallops in shell positioned in a circle around a plate with a dash of sauce from the wok. Place finely sliced carrot & red capsicum in the centre
