some feedback on Yum Cha Dragon. The team and I popped for dinner
last night. Apart from the great food and atmosphere, everyone
commented on the superb service. Both the manageress and the waitress

Finally, dim sum with a sea view. Well, almost.
The long, wide windows at Yum Cha Dragon frame Victoria Harbour, but you’re not here to look at masts and marinas. You want to unwrap sticky rice parcels with minced pork and Chinese mushrooms in a black bean sauce, and chew through some Chinese sausage rolls.

A
recent newcomer to the waterfront is Yum Cha Dragon… comes
with the added bonus of James Tan (The Duck, Magic City) in a
head chef and consultant role. His influence is noticeable in
the modern, user-friendly restaurant that combines nicely cooked
and plated Chinese staples with a decent wine list, a smart room
and obliging, friendly service.
The dining room is a simply, airy space that keeps overt oriental
references to a clean lined minimum – theme rather than
theme park. There are stone dragons at the front door, a dragon
water feature at the back of the rooms, some coloured lanterns
and shelves containing Chinese ceramics. Warm mustard and burgundy
tones, a carpeted floor and comfortable black chairs make the
room as cosy as it is smart, with..water views providing an impressive
backdrop.
The
menu is cleverly constructed. Yum Cha is available all day and
while the list includes the usual dumplings and spring rolls,
there are also pint-sized versions of many dishes from the a la
carte menu so that you can create your own banquet. For those
who like to share and sample many dishes it is ideal (there are
multiple platter and banquet options, too) but there is also plenty
for the “I want my own plate of food” demographic.
Yum
Cha Dragon adds another excuse to brave the Docklands. Its relaxed
attitude and tasty fare could even have you adding it to your
list of favourites

The
menu in this new restaurant is wonderfully inventive and offers
surprises on many levels.
Chef
James Tan has broken the tradition of only serving Yum Cha at
lunch, providing flexibility by also serving it at dinner. Gone
is the traditional cumbersome Chinese menu which has been replaced
with the simple headings of Entrees, Chinese BBQ & Grill,
Platters to Share, From the Wok, Yum Cha, Sweets & Treats
and Cheese. James has reworked the presentation of Chinese cuisine
to create both a modern visual treat and a taste sensation. He
has introduced the art of the Chinese BBQ and grill, where meats
and seafood are prepared with exotic ingredients to create special
flavours that are unique from region to region.
If
it takes your fancy, you can choose your own degustation of favourite
dishes - which is what I did - and enjoy a banquet to beat all
banquets. Some of the dishes included are freshly shucked oysters,
large Queensland tiger prawns, creamy lobster and crab bisque,
Cantonese style boned roast duck, and “live from tank”
whole barramundi barbecued with spicy tomato jam and lime.
Add
to this the wonderful waterfront setting with its expansive views
over the city skyline and you’ll have a very special time.

Cha Dragon, with a completely new fit-out that speaks of its Chinese
heritage with strong colours and dragon water feature, but tasteful
lack of extra glitz. ... Obviously yum cha should feature strongly,
and it is served at both lunch and dinner. Trays are circulated
regularly but, thankfully, you can order from the menu. In the
unrushed smaller format here this is a relief, and a delight to
enjoy dishes without threat of missing out. The various gow gee
are exemplary, with soft translucent wheat starch skins and crunchy-fresh
fillings of sparkling purity of flavour. Sui mai was of similar
quality....From the grill, the twice-cooked quail meat is haunted
by star anise and a master stock sauce, a simply lovely rendition.
Unlike most Chinese restaurants, care and attention has been given
to the sweets.
Staff
are so friendly I started to expect they had sussed me out but,
watching the room, there was a consistency of attentive service
that showed no favour to any table. The proprietary service from
all the staff gave added warmth and enjoyment to a relaxing afternoon.
The yum cha menu carries enough options to create a full Chinese
degustation - from delicate seafood dumplings to duck and suckling
pig. But venture into the wok and grill for more options that
introduce some modern creative touches from a chef who obviously
likes fine produce, and handles it well. Yum Cha Dragon has been
open only six weeks but already lifts the prospects of the Docklands. - CHRISTOPHER
